An inspired choice is the roast loin of mutton with cabbage and bacon, and there's braised Buccleuch lamb shank with pea puree for those seeking by this time a slightly more carnivoristic approach.

Merlot 2006

Deep red in colour with aromas red fruit and cocoa with hints of vanilla, spice and cedar. The palate is packed with plum and black cherry leading into a long and silky smooth smoky vanilla finish.

Similar to previous vintages the Merlot grapes were crushed and fermented in separate lots. After fermentation the wine was then placed in American oak barrels and allowed to age for approximately one year
